Have you ever heard of vegan honey? It's not the latest superfood, but just a nice name for dandelion syrup which you can make in your own kitchen, no bees needed, and which really tastes like mild honey! I made this treat earlier this summer when dandelions were in season. And when they are in season, we really do have enough!
See, we have some so-called lawn area on our premises we keep pretty short. But early summer, when there are not so many flowers yet in the garden or meadow areas, I do not mow the lawn for the sake of the bees. And, as the lawn consists mostly of dandelions, clovers and creeping ivy, the lawn at the end of May is just one blooming dandelion field! Lots of material for dandelion sirup.

Dandelion syrup
Ingredients | Amount |
Dandelion flowers (yellow parts only) | 1 litre |
Water | 4 dl |
Jam sugar (sugar with pectin) | 330 gr |
Lemon juice | 1 ts |
Pick the dandelion flowers from a clean spot, rinse the bugs out. Put the flowers and the water into a pot. Bring to boil, remove the pot from the stove and let cool for 20 minutes. Sieve the dandelion water into another pot, really press the liquid out of the flowers! Add the jam sugar and lemon juice, bring to boil. Let boil for about 5 minutes. Fill into sterilized jars and you're done! Enjoy!
