Here's a report on another jam I tried this summer. It's lovingly called the Poor Man's Cloudberry Jam, even though mine wouldn't fool anyone!
What you need for this jam is very little (recipe originally found in Hanna's blog):
1 kg | Carrots |
1 kg | Gooseberries |
1 kg | Jam sugar |
1 dl | Water |
Then you mix the gooseberries in and bring the mixture into boil. Once it is steaming hot, add the sugar and boil for 10-15 minutes.
After boiling and letting the jam cool a bit, fill it in hot, sterilized jars as usual. That's it!
But why the name, and why won't mine fool anyone? Well, cloudberries are rather rare and therefore expensive here in Finland, but lots of people love them. When made into jam, the jam is not only delicious but also beautifully yellow-orange in colour. That's what this recipe is supposed to reproduce - a cloudberry coloured jam. As I didn't use the yellow gooseberries but red ones instead, mine turned out red rather than yellow! I don't mind, it's delicious anyway!
